Preparing Cannoli Shells

Make the Dough
In a large bowl, mix together the flour, sugar, and salt. Add the butter and mix until crumbly. Stir in the egg and wine until a dough forms.

Knead the Dough
On a floured surface, knead the dough for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
After resting, roll out the dough to about 1/8 inch thickness. Cut into circles about 4 inches in diameter.

Fry the Shells
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Wrap the dough circles around metal cannoli tubes, sealing the edges with a bit of water. Fry until golden, about 2-3 minutes. Remove and drain on paper towels.
Making Cannoli Cream Filling

Combine Ingredients
In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix well until smooth and creamy.

Add Chocolate Chips
Fold in the mini chocolate chips gently until evenly distributed throughout the cream.
Assembling the Cannoli

Fill the Shells
Using a piping bag or a spoon, fill the cooled cannoli shells with the ricotta cream mixture.

Drizzle with Syrup
Drizzle dark and white chocolate syrup over the filled cannoli as desired.
