Sauce Preparation

    Make the Tomato Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasoning

    Add the plum tomatoes, salt, black pepper, and fresh basil to the saucepan. Stir well and bring to a simmer. Let it cook for 15-20 minutes until slightly thickened.

Pasta and Vegetable Preparation

    Cook Pasta

    In a large pot of boiling salted water, cook the campanelle pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables

    In a large skillet, add a bit of olive oil if needed, and heat over medium-high. Add the sliced mushrooms, broccoli florets, bell pepper, carrot, and zucchini. Sauté for about 5-7 minutes until vegetables are tender.

    Combine Everything

    Add the cooked pasta to the skillet with the sautéed vegetables. Pour the tomato sauce over the pasta and toss everything together until well combined. Cook for an additional 2-3 minutes to heat through.
