Method

Beef Preparation

  1. 1

    Sear the Short Ribs

In a large skillet, heat a bit of oil over medium-high heat. Season the boneless short ribs with salt and black pepper. Sear each side of the ribs until browned, about 3-4 minutes per side. Remove from skillet and set aside.

  2. 2

    Prepare Braising Liquid

In the same skillet, add chopped roasted onions and minced garlic cloves. Sauté for 2-3 minutes until fragrant. Add the Sweet Baby Ray's BBQ sauce and beef broth. Stir well to combine.

  3. 3

    Braise the Ribs

Return the seared short ribs back to the skillet with the braising liquid. Bring to a simmer, cover, and reduce heat to low. Braise for 2.5 to 3 hours, or until the meat is tender and easily shredded.

Mashed Potatoes Preparation

  1. 4

    Boil Potatoes

Peel and cut the russet potatoes into cubes. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender.

  2. 5

    Mash Potatoes

Drain the cooked potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Garlic Spinach Preparation

  1. 6

    Sauté Spinach

In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute. Add fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and black pepper.

Plating

  1. 7

    Assemble the Dish

On each plate, create a bed of mashed potatoes. Top with a generous serving of braised short ribs along with the BBQ jus. Add sautéed garlic spinach on the side and finish with a sprinkle of crispy fried onions on top.
