Add Garlic
Mince the garlic cloves and add them to the pot with the caramelized onions. Cook for an additional 2 minutes until fragrant.

Combine Broth and Seasoning
Pour in the beef broth and add the thyme, bay leaves, salt, and black pepper. Stir to combine and bring to a boil.

Simmer
Reduce the heat to low and let the soup simmer for about 30 minutes to allow the flavors to meld together. Adjust seasoning as necessary.
Crostini Preparation

Prepare the Baguette
Preheat the oven to 400°F (200°C). Slice the baguette into ½ inch thick slices.

Season and Toast
Brush both sides of the baguette slices with olive oil and sprinkle them with garlic powder. Place them on a baking sheet and bake for about 10-12 minutes, or until they are golden and crispy.
Assemble and Bake

Combine Soup and Cheese
Once the soup is ready, remove the bay leaves. Ladle the soup into oven-safe bowls or ramekins, filling them about ¾ full. Top each bowl with a generous amount of mozzarella and parmesan cheese.
