Prepare the Jalapeño Jam
Start by washing and finely chopping the fresh jalapeños. You can remove the seeds if you prefer less heat.

Cook the Mixture
In a saucepan, combine the chopped jalapeños, sugar, apple cider vinegar, and salt. Bring to a boil over medium heat.

Simmer
Reduce the heat to low and let the mixture simmer for about 20 minutes, or until it thickens. Stir occasionally to prevent sticking.

Cool the Jam
Once thickened, remove from heat and allow to cool before using.

Form the Patties
In a bowl, combine the ground beef, salt, and black pepper. Mix gently but thoroughly, then divide the mixture into two equal portions and shape them into half-pound patties.

Add Cheese
After flipping, place a slice of pepper jack cheese on each patty and cook for an additional 4-5 minutes, or until the cheese is melted and the burger reaches desired doneness.

While the burgers are cooking, lightly toast the burger buns on the grill or in a toaster until golden brown.

On the bottom half of each toasted burger bun, place a lettuce leaf, followed by the cooked burger patty with melted cheese.

Top the burger with slices of tomato, pickles, and red onion.

Spread a generous amount of housemade jalapeño jam on the top half of the bun before closing the burger.
