Prepare the mozzarella

Cut the fresh mozzarella cheese into sticks, approximately 1/2 inch thick.

Set up the breading station

In three separate bowls, place the all-purpose flour in the first bowl, beat the eggs in the second bowl, and place the bread crumbs in the third bowl. Season the flour with salt and black pepper.

Bread the mozzarella

Coat each mozzarella stick in flour, then dip it into the beaten eggs, and finally roll it in the bread crumbs until fully coated.

Heat the oil

In a deep skillet or pot, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

Fry the cheese

Carefully place the breaded mozzarella sticks in the hot oil, a few at a time, and fry for about 2-3 minutes until golden brown. Use a slotted spoon to remove them and drain on paper towels.

Marinara Sauce

Sauté the garlic

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the tomatoes

Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Mix well and bring to a simmer.

Finish the sauce

Let the sauce simmer for about 15-20 minutes, stirring occasionally. Stir in the chopped fresh basil just before serving.
