Sweat vegetables
In a heavy-bottomed pot or Dutch oven, melt 4 tbs unsalted butter over medium heat. Add the finely diced onion, celery, and carrot (about 1 cup, 1 cup, 1/2 cup respectively). Cook gently, stirring occasionally, until vegetables are translucent and soft but not browned, about 6–8 minutes.

Make roux
Reduce heat to medium-low. Sprinkle 1/2 cup all-purpose flour over the softened vegetables and stir constantly to coat the vegetables and cook the raw flour taste, about 2–3 minutes. Do not allow the roux to darken; you want a blond roux to thicken the soup.

Deglaze
Raise heat to medium and add 1/2 cup dry white wine to deglaze, scraping any browned bits from the bottom. Let the wine reduce by about half, 2–3 minutes.

Add liquids and simmer
Gradually whisk in 4 cups shellfish or fish stock until smooth. Stir in 2 cups whole milk, 1 cup heavy cream, and 1 tbs tomato paste. Bring the mixture just to a gentle simmer, then reduce heat to low. Simmer gently for 15–20 minutes to meld flavors and slightly thicken, stirring occasionally so it doesn't stick. Taste and skim any foam or impurities from the surface.

Season soup base
Stir in 1 tsp Old Bay seasoning, 1 tsp sea salt, and 1/2 tsp freshly ground black pepper. Adjust seasoning lightly now, remembering more will be added later with sherry and lemon.

Prepare crabmeat
While the soup simmers, gently pick through 12 oz lump crabmeat to remove any shell pieces and cartilage. Keep lumps intact for texture; reserve 4 oz additional crabmeat for garnish if using.

Incorporate roe and crab
If you have crab roe (2 tbs), whisk it with a small amount of warm soup broth in a bowl until smooth, then slowly stir that mixture back into the pot—this adds color and authentic flavor. Fold in the picked crabmeat gently and warm through over low heat for 3–5 minutes—do not boil once crab is added or meat will toughen.

Finish with sherry and seasonings
Turn off the heat under the pot. Stir in 2 tbs dry sherry, 2 tbs minced chives, 2 tbs chopped parsley, 1 tbs fresh lemon juice, 1/2 tsp Worcestershire sauce, and 1/8 tsp cayenne pepper. Taste and adjust salt, pepper, or lemon as needed. The sherry should be added off-heat or with very low heat to preserve its bright flavor.

Let the soup rest off the heat for 5 minutes to let flavors marry. Rewarm gently if needed before serving, but avoid boiling.
