    Place the peeled, cubed sweet potatoes in a large pot and add enough water or broth to just cover them (about 2 cups). Add 1 tsp salt to the liquid.

    Bring to a boil over high heat. Once boiling, reduce to a simmer and cook until the sweet potatoes are very tender and can be easily pierced with a fork, about 12–15 minutes depending on cube size.

    Drain the sweet potatoes well in a colander, then return them to the warm pot off the heat for 1–2 minutes to allow excess steam to evaporate (this helps prevent watery mash).

Whip & enrich

    Warm the dairy

    While the potatoes are cooking or immediately after draining, gently warm the milk and butter together in a small saucepan or microwave until the butter is melted and the mixture is warm (not boiling). Warming helps the potatoes absorb the liquid for a fluffier texture.

    Transfer the drained sweet potatoes to a large bowl or the bowl of a stand mixer fitted with the paddle attachment. Begin mashing briefly by hand or with the mixer on low to break them up.

    With the mixer running on low (or using a sturdy hand masher), slowly add the warmed milk-butter mixture in a steady stream. Continue whipping until the potatoes are smooth and fluffy but not gluey, about 1–2 minutes with a mixer or 2–3 minutes by hand.

    Add the mascarpone or sour cream, 1 tsp maple syrup (if using), black pepper, and 3/4 tsp kosher salt. Mix until incorporated and taste; adjust seasoning with additional salt or pepper if desired. Avoid overmixing to keep the texture light.

    If using, fold in the orange zest for a bright note and transfer the whipped sweet potatoes to a serving bowl.
