Build the sour base
In a cocktail shaker, add 0.75 oz fresh lime juice, 0.5 oz simple syrup, 1.25 oz dry gin, and 2 dashes aromatic bitters. Fill the shaker with ice (enough to reach about 3/4 full).
- 3
Shake
Secure the shaker and shake vigorously for 10–12 seconds — just long enough to chill and lightly dilute the sour base.
- 4
Strain into glass
Strain the shaken mixture over the large ice cube in the prepared glass, leaving about 1/2 inch of headspace at the top for the beer.
- 5
Top with beer
Gently pour 3 oz of a cold, citrus-forward IPA down the side of the glass so it layers lightly over the sour base. Pour slowly to preserve carbonation and create a slight foam head. The IPA adds hop character and a floral/citrus brightness that complements the lime-gin base.
- 6
Finish and garnish
Give the drink one gentle stir with a bar spoon (1–2 turns) to marry the layers without flattening the beer too much. Garnish with a mint sprig slapped between your palms to release aroma and a lime wheel on the rim.
- 7
Serve
Serve immediately with a straw or without, encouraging the drinker to sip through the foam to experience the hop aroma first and the bright sour base beneath.
