Potato chips

Prep potatoes
Wash and peel the russet potatoes (peeling optional if you prefer skin-on chips). Using a mandoline or a very sharp knife, slice the potatoes 1.5–2 mm (very thin) and place slices in a large bowl of cold water.

Remove starch
Soak the potato slices in cold water for 20–30 minutes, stirring occasionally to release starch. After soaking, drain and rinse the slices, then transfer to a clean towel and pat thoroughly dry in batches (very important to avoid oil splatter and ensure crispness).

Heat oil and fry
In a heavy-bottomed pot or deep fryer, heat the neutral oil to 350°F (175°C). Fry the potato slices in small batches (do not crowd) for 2–3 minutes per batch or until golden and crisp. Use a slotted spoon to transfer chips to a paper towel–lined tray to drain.

Season
While still warm, sprinkle the chips with kosher salt to taste (about 1 tsp total across the batch). Allow chips to cool slightly; they will crisp further as they cool.
Bleu cheese dressing

In a medium bowl whisk together mayonnaise, sour cream, and buttermilk until smooth. Add apple cider vinegar, lemon juice, garlic powder, black pepper, and 1/4 tsp salt; whisk to combine. Fold in 1/4 cup crumbled bleu cheese, leaving some small chunks for texture. Taste and adjust seasoning — add a little more buttermilk if you want a thinner pourable dressing. Refrigerate at least 15 minutes to let flavors meld.
Assembly & garnish

Plate chips
Arrange a single layer or slightly overlapping handfuls of cooled potato chips on a large platter or on individual plates.

Add dressing and cheese
Drizzle the bleu cheese dressing over the chips in an even pattern. Immediately sprinkle the remaining 1/2 cup crumbled bleu cheese over the dressed chips so it adheres to the dressing.

Garnish
Scatter the thinly sliced scallions and optional chopped chives evenly over the top for freshness and color.

Serve immediately so the chips remain crispy. Provide extra dressing on the side if desired.
