Method

Chicken Add-on

    Prep

    Pat the chicken breast dry with paper towels. If very thick, butterfly or pound to an even thickness about 3/4 inch for even cooking.

    Season

    Rub the chicken with 1 tbs olive oil, then season evenly with garlic powder, smoked paprika, 1/2 tsp salt and 1/4 tsp black pepper on both sides.

    Cook

    Heat a medium skillet over medium-high heat. Once hot, add the chicken and cook 4–6 minutes on the first side without moving until a golden crust forms. Flip and cook another 4–6 minutes until an internal temperature of 165°F (74°C) is reached. Adjust time for thickness.

    Finish

    Remove from pan and let rest 3–5 minutes. Squeeze the lemon (1/4) over the chicken if using, then slice or dice as desired for serving.

Salmon Add-on

    Prep

    Pat the salmon dry. If using skin-on, leave skin intact. Preheat oven to 400°F (200°C) if roasting, or heat a nonstick/skillet over medium-high if pan-searing.

    Season / Optional Glaze

    Brush salmon with 1 tsp olive oil and season with 1/2 tsp sea salt and 1/4 tsp black pepper. If using glaze, mix 1/2 tbs dijon mustard with 1/2 tsp brown sugar and brush a thin layer over the top.

    Cook (Oven)

    Place salmon on a parchment-lined baking sheet, skin-side down if applicable. Roast 10–12 minutes for a 1-inch thick fillet, until salmon flakes easily and reaches 125–130°F (52–54°C) for medium doneness (or cook longer to desired doneness).

    Cook (Skillet)

    For pan-sear: heat skillet until hot, place salmon skin-side down and press gently 15 seconds to prevent curling. Cook 4–5 minutes skin-side down, flip and cook 1–3 minutes more depending on thickness.

    Finish

    Remove salmon and let rest 2–3 minutes. Serve with a squeeze of the lemon wedge.

Shrimp Add-on

    Prep

    If shrimp are frozen, thaw completely and pat dry. Ensure they are peeled and deveined.

    Season

    Toss shrimp with 1 tsp olive oil, 1 tsp minced garlic, 1 tsp lemon juice, 1/8 tsp red pepper flakes, 1/4 tsp salt and 1/8 tsp black pepper until evenly coated.

    Cook

    Heat a skillet over medium-high heat. Once hot, add shrimp in a single layer and cook 1.5–2 minutes per side, until opaque and pink with slight golden edges. Avoid overcooking.

    Finish

    Remove from heat and let cool 1 minute. Taste and adjust seasoning; add an extra squeeze of lemon if desired. Serve whole or chopped.
