Prepare and season seafood
Pat shrimp and crawfish dry with paper towels. In a bowl, toss shrimp and crawfish with 2 tablespoons melted butter, 1 tablespoon lemon juice, 1 teaspoon salt and 1 teaspoon black pepper until evenly coated. Set aside to marinate briefly while you make the fondue base (10 minutes).
Sear shrimp
Heat a large skillet over medium-high heat. Add a small drizzle of oil or 1 tablespoon butter. Sear shrimp 1–1½ minutes per side until just pink and opaque; avoid overcooking. Remove shrimp to a plate. Quickly warm crawfish in the same pan for 30–45 seconds just to take the chill off and bloom flavors; remove and keep warm with the shrimp. Reserve any pan juices and set aside.
Fondue Base / Roux & Stock
Make the roux
In a heavy-bottom saucepan or fondue pot set over medium heat, melt 3 tablespoons butter. Add the finely minced shallot and sauté 1–2 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant. Sprinkle in 3 tablespoons flour and whisk continuously for 1–2 minutes to cook off the raw flour taste, forming a blond roux.
Deglaze and build liquid
Gradually whisk in 1 cup dry white wine, scraping any browned bits from the pan (including reserved pan juices from searing if using). Once the wine is mostly absorbed and the mixture is simmering, whisk in 2 cups seafood stock. Simmer gently for 3–4 minutes until slightly reduced and thickened.
Add cream
Lower heat to medium-low and whisk in 1 cup heavy cream. Heat until the mixture is warm and beginning to thicken, about 2–3 minutes. Do not boil vigorously—just a gentle simmer to integrate.
Cheeses & Flavoring
Temper and add cheeses
Reduce heat to low. Add 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire, 1 teaspoon smoked paprika and 1 teaspoon cayenne pepper. Gradually add the grated Gruyère and Fontina, a handful at a time, stirring or whisking until each addition is fully melted and smooth before adding more. Stir in 1 tablespoon grated Parmesan for extra depth. If the fondue is too thick, add 1–2 tablespoons warm stock or cream to reach a smooth dipping consistency.
Adjust seasoning
Taste and adjust salt and pepper as needed. If you want brighter acid, add an extra 1/2 tablespoon lemon juice. Keep the fondue warm on the lowest heat setting or over a small fondue burner to maintain a gentle simmer (avoid boiling).
Aromatics & Finish
Finish with herbs and lemon
Fold the seared shrimp and warmed crawfish into the cheese fondue, stirring gently to coat. Stir in 2 tablespoons chopped parsley, 1 tablespoon chopped chives and 1 teaspoon lemon zest. Allow the seafood to heat through in the fondue for 1–2 minutes—do not cook further to avoid toughness.
Transfer the fondue pot to the table over a low flame or fondue burner. Provide dippers on a platter. Serve immediately, encouraging guests to spear dippers and briefly submerge into the fondue to coat with cheese and seafood. Stir occasionally to keep the mixture smooth; add a splash of warm stock if it thickens too much.
Dippers & Serving
Prepare dippers: slice French bread and lightly toast if desired. Steam baby potatoes until tender and blanch asparagus until bright green and crisp-tender. Arrange dippers on a board with extra lemon wedges and chopped parsley for garnish.
Portioning and storage: Leftover fondue can be cooled and refrigerated in an airtight container for up to 2 days. Reheat gently over low heat, whisking in a splash of stock or cream to restore texture. Cooked shrimp and crawfish are best removed and stored separately if you expect leftovers, then stirred back in when reheating.
