Prepare and Season
Pat the brisket dry with paper towels. Combine kosher salt, black pepper, paprika, and garlic powder in a small bowl. Rub the olive oil over the entire brisket, then massage the dry spice mix evenly over all sides. Let rest at room temperature for 20–30 minutes or refrigerate up to overnight (bring to room temperature before cooking).
Sear (Optional) and Braise
Preheat oven to 300°F (150°C). In a large, ovenproof Dutch oven or heavy pot over medium-high heat, add 1 tablespoon olive oil. When shimmering, sear brisket 3–4 minutes per side until browned (use tongs and a spatula to avoid tearing). Remove brisket briefly. Pour beef broth into the pot, scraping browned bits from the bottom. Return brisket to the pot fat-side up. Cover tightly with a lid and transfer to the oven. Braise for 2.5–3 hours, or until fork-tender (internal texture should pull apart easily).
Rest and Chop
Remove brisket from the oven and let rest in the covered pot for 20 minutes to reabsorb juices. Transfer to a cutting board and use two forks or a sharp knife to chop the brisket into bite-sized pieces (approximately 1/2-inch). If desired, toss the chopped brisket with 1/2 cup bbq sauce for added flavor. Keep warm until serving.
Salad Base & Toppings (Salad Bar Setup)
While the brisket braises, prepare the salad components. Wash and thoroughly dry all salad greens. Place mixed greens in a large shallow serving bowl or separate containers for a salad bar. Arrange cherry tomatoes (halved), cucumber slices, red onion, roasted corn, black beans, shredded cheddar, pickled jalapeños, diced avocado (if using), tortilla strips, and chopped cilantro in separate bowls or compartments so guests can build their own salads.
Dressings & Finishing
Offer the chipotle-lime dressing as the primary dressing; provide ranch and extra bbq sauce on the side. Place lime wedges for squeezing over assembled salads. Sprinkle flaky sea salt and freshly ground black pepper over the salad bar items if desired so guests can season to taste.
To serve: place a generous bed of mixed greens on each plate, add desired toppings, then top with 3/4–1 cup warm chopped brisket. Drizzle 1–2 tablespoons dressing over the salad or allow guests to dress individually. Garnish with cilantro and a lime wedge.
