Warm tortillas

Wrap flour and corn tortillas separately in foil and warm in a 300°F (150°C) oven for 10–12 minutes, or stack and microwave 6–8 tortillas at a time for 30 seconds, covered with a damp towel until pliable.

Heat a large skillet or griddle over medium heat. Add 1 tsp of oil or a small pat of butter to coat for the first few quesadillas to prevent sticking.

For crisp, browned quesadillas: melt 1/2 tsp butter in the skillet and place one warmed tortilla in the pan. Keep heat at medium to medium-low so cheese melts without burning the tortilla.

Cheeses

Mix shredded cheddar and Monterey Jack in a bowl. For every quesadilla use about 3/4 to 1 cup cheese (adjust to preference). Reserve queso fresco for garnish or inside as a finishing crumble.

Sprinkle an even layer of the cheese blend on half of each tortilla in the skillet (about 3/4 cup), leaving a 1/2-inch border to prevent overflow.

Proteins (pre-cooked)

If proteins are cold, warm them in a skillet or microwave until hot (1–2 minutes). Season lightly with salt, pepper, 1/2 tsp cumin, and 1/2 tsp chili powder if desired.

Distribute 1/2 to 3/4 cup of the chosen protein evenly over the cheese on each tortilla. For beans, mash slightly with a fork so they adhere to the cheese layer.

Vegetables & Mix-ins

Sauté diced onion and red bell pepper in 1 tsp oil over medium heat for 3–4 minutes until softened and slightly caramelized. Season with a pinch of salt and 1/4 tsp cumin. Drain any excess liquid.

Scatter a few tablespoons of sautéed vegetables, corn kernels, sliced scallions, pickled jalapeños and cilantro over the protein layer as desired. Avoid overfilling — keep a thin even layer to allow folding and even cooking.

Assemble & Cook

Fold the tortilla in half over the fillings and press gently with a spatula to seal. Cook 2–3 minutes on the first side until golden brown and cheese begins to melt.

Carefully flip the quesadilla and cook another 2 minutes, applying gentle pressure, until the second side is golden and cheese is fully melted. If cheese is not melted after 4–5 minutes total, lower heat and cover skillet for 1–2 minutes to trap heat.

Transfer cooked quesadilla to a cutting board and let rest 1 minute, then slice into 4 wedges with a sharp knife or pizza cutter.

Salsas & Sauces

Serve each quesadilla with sides of mild salsa, salsa verde, sour cream, guacamole and hot sauce. Offer lime wedges to squeeze over finished pieces.

If using queso fresco, sprinkle a little on top of sliced quesadilla or on the guacamole for a finishing touch.

Taste one wedge and adjust salt, pepper, or a squeeze of lime juice to taste. Offer extra chili powder or hot sauce for guests who want more heat.
