Method
Balsamic Glaze
Reduce vinegar to glaze
Pour 1 cup balsamic vinegar into a small, heavy-bottomed saucepan. Add 1 tablespoon brown sugar (or honey) and a pinch of sea salt. Place over medium heat and bring to a gentle simmer, stirring to dissolve the sugar. Reduce heat to medium-low so the liquid maintains a slow simmer.
Simmer, uncovered, until the vinegar has reduced by about half and coats the back of a spoon — this typically takes 12–18 minutes depending on the heat and pan. Watch carefully during the last few minutes to prevent scorching.
If the glaze becomes too thick as it cools, stir in up to 2 teaspoons of water to reach a pourable consistency. Remove from heat and allow to cool to warm or room temperature; it will thicken further as it cools.
Burrata/Mozzarella Assembly
Prepare the cheese and tomatoes
If using a whole mozzarella or burrata, drain any liquid and pat gently dry with paper towels. Place the cheese on a serving platter. Arrange halved/sliced tomatoes around and on top of the cheese in an attractive pattern.
Season and dress
Scatter fresh basil leaves over the cheese and tomatoes. Drizzle 2 tablespoons extra-virgin olive oil evenly over everything. Sprinkle 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper gently over the dish, adjusting to taste.
Finish by drizzling the cooled balsamic glaze in a thin ribbon across the mozzarella and tomatoes. Use as much or as little glaze as you like; start with 2–3 tablespoons and add more if desired.
Optional Garnish / Finish
Scatter 2 tablespoons toasted pine nuts or chopped walnuts over the top for crunch and texture.
Grate 1 teaspoon lemon zest over the finished plate for brightness. Serve immediately at room temperature so the cheese is soft and aromatic.
