Heat dairy and butter
While potatoes cook, combine whole milk, heavy cream, and 6 tablespoons of butter in a small saucepan over low heat. Warm gently until butter melts and mixture is hot but not boiling; keep warm.
Incorporate dairy and butter
Gradually add the warm milk/cream/butter mixture to the mashed potatoes, stirring gently with a wooden spoon or rubber spatula until incorporated. Add remaining 2 tablespoons butter for richness. If mash is too stiff, add warmed buttermilk (up to 1 cup) or more warm milk 2 tablespoons at a time until desired creaminess is reached.
Season
Taste and season with the 2 teaspoons freshly ground black pepper and additional salt as needed. Keep mashed potatoes warm in a covered bowl, insulated cambro, slow cooker on low, or in a serving chafing dish.

Roast garlic
Preheat oven to 400°F (200°C). Slice tops off garlic heads, drizzle each with a little olive oil, wrap in foil and roast 30–35 minutes until soft and golden. Squeeze roasted garlic cloves into a small bowl; guests can stir into their portions.
Caramelize onions
For caramelized onions: heat 1 tablespoon oil and 1 tablespoon butter in a skillet over medium-low. Add 2 large thinly sliced onions, a pinch of salt and cook, stirring occasionally, until deep golden and sweet, about 30–40 minutes. Keep warm for serving.
Cook and crumble bacon
Cook bacon until crisp in a skillet or oven, then drain on paper towels and crumble. Hold warm or at room temperature for topping.
Steam broccoli
Steam broccoli florets until just tender-crisp, about 4–5 minutes, then shock in ice water to preserve color. Reheat briefly before serving if desired.
Warm chili and sauces
Heat prepared chili gently in a saucepan over low heat until hot. Warm salsa verde, hot sauce, and creamed horseradish as desired and place in serving bowls.
Arrange toppings for bar
Transfer mashed potatoes to a large insulated serving container or two chafing dishes. Arrange bowls of sour cream, shredded cheddar, crumbled bacon, caramelized onions, roasted garlic, broccoli, green onions, parsley, Parmesan, sauces, and chili around the potatoes with serving spoons. Label each topping if desired.
Garnish & Serving
As guests build plates, suggest starting with a generous scoop of mashed potatoes, then stir in any desired mix-ins (sour cream, roasted garlic, buttermilk for tang). Top with shredded cheddar and a quick microwave or broiler blast if you want melted cheese. Finish with bacon, chives, caramelized onions, steamed broccoli, a spoonful of chili for a hearty option, a drizzle of melted butter or hot sauce, and a sprinkle of flaky sea salt, paprika, parsley and freshly cracked black pepper to taste.
Keep replenishing toppings and mashed potatoes as needed. Leftover mashed potatoes can be stored in an airtight container in the refrigerator for up to 3 days; reheat gently with added milk or cream to loosen.
