Method
Raspberry Glaze
Cook the glaze
Place 1 cup raspberries, 3 tablespoons sugar, 1 teaspoon lemon juice, and 2 tablespoons water in a small saucepan over medium heat. Stir occasionally and bring to a gentle simmer. Cook until raspberries break down and the mixture is bubbling lightly, about 5–7 minutes.
Strain and thicken
Remove from heat and push the mixture through a fine-mesh sieve into a bowl, pressing with a spoon to extract as much puree as possible. Discard seeds. Return the strained puree to the saucepan. Mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry and stir into the puree. Bring to a low simmer and cook 1 minute until slightly thickened. Remove from heat and stir in 1/2 teaspoon lemon zest if using. Let cool to warm or room temperature; it will thicken slightly more as it cools.
Adjust consistency and sweetness
If glaze is too thick, whisk in up to 1 tablespoon water until spreadable. Taste and add up to 1 teaspoon more sugar if you prefer sweeter glaze. Set aside to cool while you prepare the Brie and berries.
Sweetened Berries (fresh topping)
Gently toss 3/4 cup fresh raspberries with 1 teaspoon sugar and 1/2 teaspoon lemon juice in a small bowl. Let sit 5–10 minutes so berries macerate and release juices, then gently stir again. Keep refrigerated until assembly; these provide a fresh topping contrast to the glaze.
Brie & Assembly
Warm the Brie (optional)
If you prefer a creamy, slightly melty Brie, preheat oven to 350°F (175°C). Place the 8 oz wheel of Brie on a small parchment-lined baking sheet or in an ovenproof dish. Bake 8–10 minutes until soft but not collapsing and the rind is slightly glossy. Remove from oven and let rest 2 minutes. (If serving fully room-temperature, simply let Brie sit at room temperature 30 minutes before serving.)
Spread the glaze
Using a small spoon or offset spatula, spread a thin layer (about 2–3 tablespoons) of the cooled raspberry glaze over the top of the Brie wheel. Allow the glaze to set for 1–2 minutes.
Top with fresh berries
Pile the macerated fresh raspberries and optional blackberries/blueberries on top of the glazed Brie, letting some juice mingle with the glaze. Aim for an attractive mound but keep it balanced so the cheese can still be scooped onto crackers.
Garnish and serve
Sprinkle the fresh thyme leaves over the berries. Arrange crackers around the Brie on a serving board. For diners, provide a small spreader or cheese knife so they can scoop a bit of Brie with berries and glaze onto each cracker. Serve immediately. Leftover glazed Brie can be refrigerated up to 24 hours; bring back to room temperature before serving.
