Method
Coffee Base
- 1
Brew espresso
Pull two shots (about 60 ml total) of espresso using freshly ground beans. Use a medium-fine grind and tamp evenly. Brew directly into the serving cup if possible to retain aroma.
- 2
Adjust strength (optional)
If you prefer a weaker coffee (white coffee as an Americano-style), add 60 ml hot water to the espresso and stir gently. If you want a stronger espresso-forward white coffee, skip the water.
Milk
- 3
Heat and texture milk
Pour 150 ml whole milk into a milk pitcher. Steam with a steam wand to about 60–65°C (140–150°F), creating a velvety microfoam. If you don't have a steam wand, heat milk on the stovetop until just below simmering (~60–65°C), then froth vigorously with a handheld frother or whisk to create small bubbles and a creamy texture.
- 4
Stretch for topping (optional)
If you want a slightly milkier top, steam or froth an additional 30 ml milk until airy and set aside to spoon on top.
- 5
Sweetening & Finish
- 6
Sweeten and flavor
If using, dissolve 1 tsp granulated sugar and 1/4 tsp vanilla extract into the espresso while it is hot. Stir to combine before adding milk so it dissolves fully.
- 7
Garnish
Lightly dust the milk cap with a pinch (about 1/4 tsp) of ground cinnamon or cocoa for aroma and presentation. Serve immediately.
