Brisket chili

    Prepare brisket

    If your USDA brisket is cold from the refrigerator, shred it into bite-sized pieces and let it sit at room temperature for 10 minutes while you start the chili. Reserve any rendered beef juices and trim any large chunks of fat you don't want in the chili.

    Heat a large heavy-bottomed pot or Dutch oven over medium heat. Add the vegetable oil. When shimmering, add the diced onion and cook, stirring occasionally, until softened and translucent, about 5–7 minutes.

    Add the minced garlic, diced green bell pepper, and minced jalapeño. Sauté another 2–3 minutes until fragrant and peppers begin to soften.

    Stir in the ground cumin, chili powder, smoked paprika, and ancho chile powder. Cook spices with the vegetables for 30–45 seconds to bloom their flavors.

    Add the tomato paste and cook, stirring, 1–2 minutes until it darkens slightly.

    Add the shredded brisket to the pot and stir to combine with the spiced vegetables and tomato paste, breaking up any large pieces. Cook 2–3 minutes to warm the meat.

    Pour in the diced tomatoes with juices and beef stock. Stir to combine. If using, add drained kidney beans now.

    Add the brown sugar, apple cider vinegar, kosher salt, and black pepper. Bring the mixture to a gentle simmer, then reduce heat to low. Cover partially and simmer 20–30 minutes to allow flavors to meld. Stir occasionally; if it thickens too much, add a splash of stock or water.

    Taste and adjust seasoning: add additional salt, pepper, or lime juice for brightness if desired. If you want more heat, add some of the pickled jalapeños or a pinch of cayenne.

Pico de gallo

    While the chili simmers, combine the diced roma tomatoes, diced white onion, chopped cilantro, and minced jalapeño in a medium bowl.

    Add the fresh lime juice and kosher salt. Stir gently to combine. Let sit at room temperature 10–15 minutes to allow flavors to marry. Taste and adjust salt or lime.

Cheese sauce

    In a small saucepan over medium heat, melt the unsalted butter. When foaming subsides, whisk in the flour to form a roux. Cook, whisking, 1–2 minutes until the raw flour smell is gone but it hasn't browned.

    Slowly whisk in the milk and continue whisking to smooth lumps. Bring to a gentle simmer and cook until slightly thickened, about 3–4 minutes.

    Reduce heat to low and whisk in the shredded cheddar and softened cream cheese in small handfuls until melted and smooth. Stir in the mustard, salt, and pepper. If the sauce is too thick, thin with 1–2 tablespoons milk.

    Keep the cheese sauce warm over very low heat, stirring occasionally, or transfer to a small insulated container until ready to serve.

Assembly & serving

    Ladle the brisket chili into shallow bowls or onto plates (for nachos/tacos, spoon over tortilla chips or warmed tortillas).

    Spoon several tablespoons of cheese sauce over the chili where desired.

    Top with a generous spoonful of pico de gallo, a dollop of sour cream, and scatter pickled jalapeño slices.

    Finish with crumbled queso fresco or extra shredded cheddar, sliced green onions, and cilantro leaves. Serve with lime wedges on the side for squeezing.

    Leftovers: Cool chili quickly, store in an airtight container in the refrigerator up to 3–4 days. Reheat gently on the stove, thinning with a splash of stock if necessary. Cheese sauce can be gently reheated over low heat with a splash of milk, whisking until smooth.
