Method

Prep & rub

    Trim and dry

    Remove brisket from refrigerator and pat dry with paper towels. Trim excess silver skin and any very thick hard fat, leaving about 1/4" of fat cap for flavor and protection during long cooking. If brisket is tied with butcher twine, leave as-is or retie in a few places to keep shape.

    Apply binder

    Lightly coat both sides of the brisket with 2 tablespoons of mustard and 1 tablespoon of vegetable oil. The binder helps the dry rub adhere and forms a crust; the flavor of mustard will mellow during cooking.

    Make and apply rub

    Combine 3 tablespoons kosher salt, 2 tablespoons coarse black pepper, 1 tablespoon garlic powder, 1 teaspoon onion powder and 1 teaspoon smoked paprika in a bowl. Evenly season and rub the mixture into both sides of the brisket, pressing so it adheres. Cover and rest in refrigerator for at least 1 hour or up to overnight for deeper seasoning.

Low and slow cooking (oven or smoker)

    Bring to room temperature

    Remove brisket from refrigerator 30–60 minutes before cooking to take the chill off. Preheat oven or smoker to 225°F (107°C). If using a smoker, use mild fruitwood or oak for 3–5 hours of smoke flavor.

    Set up pan and liquid

    Place the brisket fat-side up on a rack in a roasting pan or sheet pan with edges. Pour 2 cups beef broth, 2 tablespoons apple cider vinegar, 1 tablespoon brown sugar and 1 tablespoon Worcestershire sauce into the bottom of the pan (do not pour over the rubbed surface). The liquid will keep the environment humid and collect drippings for sauce.

    Cook low and slow

    Roast or smoke the brisket at 225°F (107°C) until internal temperature registers about 155–165°F (68–74°C). This typically takes roughly 4–6 hours for a 5 lb brisket but can vary. Resist opening frequently; check every 60–90 minutes to monitor temperature.

    Wrap (Texas Crutch) — optional

    When the brisket reaches 155–165°F and has a dark, firm bark, remove and tightly wrap it in heavy-duty foil or butcher paper along with any accumulated pan juices (pour in a little of the liquid). Return wrapped brisket to oven or smoker to continue cooking.

    Finish to tenderness

    Continue cooking wrapped brisket until internal temperature reaches 200–205°F (93–96°C) and a probe slips into the thickest part with little resistance (feel like soft butter). For some briskets the target tenderness may be slightly lower/higher; use probe-test rather than temperature alone.

Resting, slicing & finishing

    Rest

    Remove wrapped brisket and let rest, still wrapped, in an insulated cooler or warm place for at least 1 hour (up to 2 hours). Resting lets juices redistribute and makes slicing easier without losing moisture.

    Make finishing sauce (optional)

    Skim excess fat from the pan juices. Place pan juices in a small saucepan and bring to a simmer. Whisk in 2 tablespoons butter until melted and smooth. Taste and adjust seasoning with salt, pepper or a splash more vinegar or Worcestershire as desired. Keep warm.

    Slice against the grain

    Unwrap the brisket and locate the muscle grain. Using a sharp slicing knife, slice across the grain into 1/4"- to 1/2"-thick slices. If the brisket is a whole packer with point + flat, separate the point and slice each according to its grain direction.

    Arrange sliced brisket on a platter, spoon finishing sauce or pan juices over lightly to taste, and garnish with chopped parsley and optional pickles or pickled jalapeños.
