Method
Prep
- 1
Chill glass
Put the serving glass (old-fashioned or rocks glass) in the freezer or fill with ice water to chill while you prepare the cocktail.
- 2
Prepare rim
If you want a salted rim, rub a lime wedge around the glass lip. Spread the coarse or smoked salt on a small plate and gently press the moistened rim into the salt to coat. Tap off excess.
Mixing
- 3
Combine ingredients
In a shaker, add 2 oz mezcal, 1 oz fresh lime juice, 0.5 oz agave syrup, and 0.5 oz orange liqueur.
- 4
Add ice
Fill the shaker with ice (about 1 cup) so there's enough to chill and dilute slightly.
- 5
Shake
Seal the shaker and shake vigorously for 10–15 seconds until the outside of the shaker feels cold and slightly frosted. This chills and dilutes the cocktail to the right balance.
- 6
Optional mezcal rinse
If using the mezcal rinse for extra smokiness, pour 0.25 oz mezcal into the chilled serving glass, swirl to coat the inside, then discard any excess. This is done before straining the cocktail into the glass.
Serve
- 7
- 8
Strain the shaken cocktail into the prepared glass over the fresh ice using a fine strainer or the shaker’s built-in strainer to catch small shards.
- 9
Garnish with a lime wheel or wedge on the rim. Taste and, if desired, adjust by adding a few drops of agave for more sweetness or a small squeeze of lime for more brightness.
- 10
Serve immediately. Enjoy responsibly.
