Strawberry compote

Prepare strawberries
Wash the strawberries, hull them (remove green tops), and pat dry. Quarter berries that are medium or larger so pieces are relatively uniform; leave small berries whole or halved.

Cook compote
Place the prepared strawberries, granulated sugar, water, and lemon juice in a small saucepan. Stir to combine and let sit 5 minutes to macerate, then bring to a gentle simmer over medium-low heat.

Simmer gently, stirring occasionally, until berries have softened and released juices and mixture has slightly thickened, about 6–8 minutes. For a chunkier compote stop sooner; for a smoother sauce mash lightly with a fork or back of a spoon and cook 1–2 minutes more.

Chill a medium mixing bowl and beaters (optional) in the freezer for 5–10 minutes to help the cream whip faster.

Pour the cold heavy cream into the chilled bowl. Add powdered sugar and vanilla extract.

Whip with an electric mixer on medium-high speed until soft peaks form, about 2–3 minutes. Be careful not to overbeat — if you pass stiff peaks, stop and fold gently until smooth.

If using cookies or cake, break or slice into bite-sized pieces and place a layer in serving glasses or bowls.

Spoon a generous layer (about 2–3 tablespoons) of sweetened cream over the base, then add 2–3 tablespoons of the cooled strawberry compote. Repeat to make two layers if desired.

Finish with a dollop of cream, a spoonful of compote, a sprinkle of lemon zest, and a mint leaf for garnish.

Serve immediately, or refrigerate for up to 2 hours (do not store long term assembled as cookies/cake will soften). If refrigerated, allow 5–10 minutes at room temperature before serving for best texture.
