Prepare glass (optional smoked-sugar rim)
If you want a smoked-sugar rim, pour the smoked salt and granulated sugar onto a small plate and mix. Run the lime wheel around the rim of a chilled rocks glass, then dip the rim lightly into the smoked-sugar mixture. Set the glass aside.

Combine ingredients
In a cocktail shaker add 2 oz bourbon, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz ginger liqueur, and 2 dashes orange bitters.

Add ice and shake
Fill the shaker with about 1 cup of ice (enough to chill and dilute properly). Secure the top and shake vigorously for 12–15 seconds, until the shaker is cold to the touch and you feel good dilution.

Strain
Double-strain the cocktail into the prepared rocks glass over a large ice cube or a few fresh cold ice cubes. If you prefer a straight-up presentation, strain into a chilled coupe without ice.
Garnish & Serve

Garnish with one piece of candied ginger (or a thin slice of fresh ginger) skewered on a pick and rested across the glass, and float the lime wheel on the surface or slap it gently to release aroma then drop it in. Serve immediately.
