Method
Base & Spirits
- 1
Measure and combine
In a mixing glass add 2 oz aged (añejo) rum and 0.5 oz blended/peat-forward Scotch. The rum provides body and sweetness while the Scotch adds a smoky, medicinal top note — together they form the cocktail's bold backbone.
Citrus & Sweetener
- 2
Add fresh juices and syrup
Add 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, and 0.5 oz demerara or rich simple syrup to the mixing glass. Use fresh-squeezed citrus for brightness and a slightly tart balance against the spirits.
Bitter & Spice
- 3
Add bitters
Drop in 3 dashes of Angostura bitters and 1 dash of smoked paprika bitters or mole bitters (if available). These deepen the flavor and add complexity; if you don't have the optional bitters, the Angostura alone is fine.
Chill & Dilute
- 4
Fill the mixing glass about two-thirds full with ice. Stir vigorously for 20–30 seconds (about 30–40 full stirs) until the mixture is well-chilled and slightly diluted—this rounds the edges of the strong spirits and integrates the ingredients.
Strain & Serve
- 5
Place a large clear ice cube into an old-fashioned glass. Double-strain the cocktail from the mixing glass into the serving glass to remove tiny shards of ice and any pulp.
Finish & Garnish
- 6
Express the oils of the orange twist over the surface of the drink by holding the twist skin-side down and giving it a firm pinch about 3–6 inches above the glass. Run the twist around the rim, then drop it into the glass as garnish. Optionally, grate a tiny pinch of smoked paprika over the top for visual effect and an extra whisper of smokiness.
