Prepare cocktail
If using egg white, add it to the shaker first. Pour in 2 tbs (about 60 ml) vanilla vodka, 1 tbs passion fruit liqueur, 45 ml passion fruit purée or strained juice, 15 ml fresh lime juice and 7.5 ml simple syrup into a cocktail shaker.

Wet shake
Add a generous amount of ice to the shaker. Shake hard for 12–15 seconds until the outside of the shaker is frosty and well-chilled.

Double strain & serve
Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice chips and any pulp. This yields a smooth cocktail with a glossy foam (if egg white used).

Garnish
Float one half of a fresh passion fruit (cut-side up) on top of the cocktail. If using passion fruit pulp instead of a half fruit, spoon about 1 tsp of pulp onto the foam.

Serve with bubbly
Pour 60 ml of chilled prosecco or Champagne into a small shot glass or mini carafe and serve it alongside the martini. Instruct guests to sip the sparkling wine between sips of the cocktail, or pour a little into the cocktail if desired.
