Mix and form patties
Place the ground beef in a bowl. Add kosher salt, black pepper, and Worcestershire sauce. Mix gently with your hands until just combined — do not overwork. Divide into two equal portions and form each into a patty about 3/4-inch thick and slightly wider than the buns (they will shrink while cooking).

Preheat and cook
Heat a cast-iron skillet or heavy nonstick pan over medium-high heat and add 1 tablespoon neutral oil. When the oil is shimmering, add the patties. Cook without moving for 3-4 minutes until a brown crust forms. Flip and cook another 3-4 minutes for medium (adjust time for desired doneness). If using a thermometer, target 160°F (71°C) for well-done, 145°F (63°C) for medium-rare (US ground beef safety note: many recommend 160°F). Remove patties from the pan and let rest on a plate while you prepare sauce and toast buns.

Make the peanut sauce
In a small bowl, combine creamy peanut butter, 2 tablespoons milk (or water), soy sauce, vinegar, honey (or brown sugar), sriracha, and lime juice (if using). Whisk or stir vigorously until smooth and pourable. Add more milk 1/2 teaspoon at a time if the sauce feels too thick; you want a spreadable but slightly saucy consistency.

Adjust seasoning and texture
Taste the sauce and adjust: add more soy sauce for saltiness, honey for sweetness, or sriracha for heat. Stir in the crushed roasted peanuts to add crunchy texture to part of the sauce or sprinkle on top of the finished burgers.

Toast buns
Wipe the skillet used for patties to remove burnt bits or use a clean pan. Melt 1 tablespoon butter over medium heat and place bun halves cut-side down until golden and slightly crisp, about 1 minute. Remove from heat.

Assemble the burgers
Spread about 1.5 to 2 tablespoons of the peanut butter sauce evenly on the bottom bun. Place a lettuce leaf and a slice of tomato on the sauce to create a moisture barrier. Set the rested burger patty on top. Spoon an additional 1 tablespoon of sauce over the patty and sprinkle with the remaining crushed peanuts. Add a few thin rings of red onion and optional pickles, then cap with the top bun. Repeat for the second burger.

Serve the peanut butter burgers hot with extra sauce on the side. Leftover sauce can be refrigerated in an airtight container for up to 3 days.
