Combine sauce ingredients
Stir in 1 cup ketchup, 1/2 cup apple cider vinegar, 1 cup packed light brown sugar, 2 tablespoons molasses, 1 tablespoon Worcestershire sauce, and 1 teaspoon Dijon mustard. Add 1 teaspoon smoked paprika, 1/4 teaspoon red pepper flakes, 1 teaspoon salt, and 1/2 teaspoon black pepper and mix well.

Add bourbon and simmer
Remove the pan from the heat briefly and stir in 1/4 cup bourbon (be cautious if cooking over an open flame). Return to medium-low heat and bring to a gentle simmer. Reduce heat to low and simmer uncovered 18–22 minutes, stirring occasionally, until the peaches are very soft and the sauce has thickened slightly.

Adjust texture and balance
If the sauce is too thick, add water 1 tablespoon at a time (up to the 1/4 cup) until you reach desired consistency. Taste and adjust seasoning: add a pinch more salt, 1/2 teaspoon vinegar for brightness, or 1–2 teaspoons brown sugar if you prefer sweeter.

Finish and cool
Simmer an additional 3–5 minutes after blending to meld flavors. Remove from heat and let cool slightly. If using additional bourbon for finishing, add 1 tablespoon now and stir to incorporate.

Store
Transfer sauce to a sterilized jar. Refrigerate up to 2 weeks or freeze in portions up to 3 months. Rewarm gently before using on hot grilled meats.

If you want a flammed finish: brush meat with sauce, very briefly and carefully flame with 1 tablespoon bourbon (tilt pan away from your face and keep a lid nearby). Do not attempt flambe under a hood or with excessive alcohol.
