Prepare demerara syrup (make ahead)
Combine 2 parts demerara sugar and 1 part water in a small saucepan (example: 1 cup demerara sugar + 1/2 cup water). Warm gently over low heat, stirring until sugar dissolves. Remove from heat and cool. Transfer to a sealed container and refrigerate. Use 1/2 oz per cocktail. Syrup keeps for several weeks.

Build the drink
Place 1 large ice cube into an old-fashioned glass.

Add spirits and bitters
Pour 2 oz Evan Williams Extra Aged bourbon over the ice. Add 1/2 oz demerara syrup and 3 dashes of Angostura bitters.

Stir
Stir gently with a bar spoon for about 20–30 seconds (15–20 full revolutions) until the drink is well chilled and slightly diluted. Aim to achieve a glossy, slightly viscous texture and an approximate 20–25% dilution from the ice.

Serve immediately. Optionally, add a second large ice cube if desired to slow further dilution.
