Prepare apples
Wash the apples thoroughly. Using a paring knife or apple corer, remove cores then slice each apple into thin wedges (about 1/8β1/4 inch thick). Place slices in a medium bowl and toss immediately with the 2 tablespoons lemon juice and 2 teaspoons granulated sugar; set aside for 5 minutes. The lemon prevents browning and the sugar starts maceration.

Cook apples
Heat a nonstick skillet over medium heat. Add 1 tablespoon unsalted butter. When the butter is melted and foamy, add the apple slices in a single layer or two small overlapping layers (work in batches if necessary). Sprinkle the apples with 1 tablespoon light brown sugar, 1 teaspoon ground cinnamon and a pinch of sea salt. Cook undisturbed for 2β3 minutes until the underside begins to brown.

Finish and glaze
Stir or flip the apple slices and continue cooking for another 2β3 minutes until apples are tender but still hold their shape and a glossy syrup has formed. If pan becomes too dry, add a teaspoon of water. Taste and adjust sweetness with an extra 1/2 teaspoon granulated sugar if desired. Remove from heat.

Plate warm sauteed green apples over a scoop of vanilla ice cream or a dollop of Greek yogurt. Sprinkle with 2 tablespoons toasted chopped walnuts or pecans and garnish with fresh mint leaves.

Serve immediately while warm. Leftover apples keep in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet or microwave before serving.
