Season oysters with 1 tsp salt, 1/2 tsp black pepper and 1 tsp hot sauce (optional). Toss gently and set aside while you prepare the breading station (5–10 minutes).

Dry mix
In a shallow bowl or pie plate combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1/4 cup cornmeal (if using), 1/2 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, 1 tsp salt and 1/2 tsp black pepper. Whisk to blend and break any lumps.

In a second bowl whisk together 2 large eggs and 1/2 cup buttermilk (or whole milk) until combined.

Breadcrumbs (optional)
If using panko for extra crunch, place 1 cup panko breadcrumbs in a third shallow dish. You can combine half panko/half dry mix for a lighter crust or use panko as the final coating.

Set up a three-station dredging line: (1) dry flour mix, (2) egg-buttermilk wash, (3) panko or reserved dry mix. This ensures an even, crisp crust.

Working in small batches to avoid crowding, dredge each seasoned oyster first in the dry flour mix, shaking off excess, then dip into the egg-buttermilk wash, letting excess drip back into the bowl, then press into panko or back into the dry mix to fully coat. Place coated oysters on a wire rack set over a baking sheet and let rest 5 minutes — this helps the coating adhere.

Heat oil
Pour about 3–4 cups neutral oil into a deep skillet or medium pot to reach a 1.5–2 inch depth. Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of flour into the oil — it should sizzle and brown slowly.

Fry oysters
Fry oysters in batches of 6–8 (depending on pan size) so they have room and the oil temperature remains steady. Carefully lower coated oysters into the hot oil with a slotted spoon or spider. Fry 2.5–3.5 minutes per batch, turning once, until golden-brown and crisp. Internal oyster should be just cooked through — avoid overcooking, which makes them tough.

Drain and rest
Use a slotted spoon to transfer fried oysters to a paper towel-lined baking sheet or rack to drain. Sprinkle lightly with a pinch of salt while hot. Repeat with remaining oysters, bringing the oil back to 350°F between batches if needed.

Finish and serve
Arrange fried oysters on a platter, garnish with chopped parsley and lemon wedges. Serve immediately with remoulade or your preferred sauce. Fried oysters are best hot and crisp; if holding briefly, keep them in a single layer on a wire rack in a 200°F (95°C) oven for up to 10–12 minutes.

In a small bowl combine 1/2 cup mayonnaise, 1 tsp Dijon mustard, 1 tbsp chopped capers, 1 tbsp finely chopped dill pickle, 1/2 tsp hot sauce, 1 tsp lemon juice, 1/4 tsp paprika and 1/4 tsp salt. Mix until smooth. Taste and adjust seasoning. Chill until ready to serve.
