Chill glass (optional)
Place an old-fashioned glass in the freezer for a few minutes or fill with ice and water while you prepare the cocktail to gently chill it. Discard chilling ice/water before serving.

Add ingredients to mixing glass
In a mixing glass or shaker, pour 2 oz Evan Williams Extra Aged bourbon, 0.25 oz simple syrup, and add 2 dashes of Angostura bitters.

Add ice and stir
Add enough ice to the mixing glass to fill it about two-thirds. Stir the mixture gently for 20–30 seconds (about 20–30 full rotary strokes) until well chilled and slightly diluted.

Prepare serving glass
Place a large ice cube (or several fresh ice cubes) into the chilled old-fashioned glass.

Strain
Strain the chilled mixture from the mixing glass into the serving glass over the ice cube(s).

Smoke the glass
If using smoke: place a small metal or heatproof dish on a stable surface, light the wood chip or cinnamon stick until it smolders, then invert the serving glass over the smoldering chip to capture smoke for 10–20 seconds. Remove the glass, add ice, and strain the cocktail into the smoked glass. Proceed with express and garnish.
