    Beat eggs

    Crack 4 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until mixture is uniform and slightly frothy, about 30 seconds.

    Cook omelet

    Heat a nonstick 10-inch skillet over medium heat. Add 1 tablespoon unsalted butter and swirl to coat. When butter foams but before it browns, pour in the beaten eggs. Allow eggs to set at the edges for 20–30 seconds, then gently push cooked edges toward the center with a silicone spatula while tilting the pan so uncooked egg flows to the edges. Cook until the eggs are mostly set but still slightly soft on top, about 1–2 minutes. Reduce heat to low, keeping the omelet in the pan and ready to receive the filling.

Filling — spicy sausage & peppers

    Cook sausage

    While the eggs are resting or in a separate skillet, heat 1 tablespoon neutral oil in a medium skillet over medium-high heat. Add 8 oz hot Italian sausage (casings removed) or spicy ground pork. Break up with a spatula and cook until browned and cooked through, about 5–7 minutes. Transfer the sausage to a plate and leave any fond in the pan.

    Sauté vegetables

    In the same skillet with the fond, add the sliced 1/2 onion, 1/2 red bell pepper, and 1 chopped jalapeño. Sauté over medium heat until vegetables are softened and beginning to caramelize, about 4–5 minutes. Add 2 minced garlic cloves, 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, and 1/2 teaspoon kosher salt. Cook, stirring, 30–45 seconds until fragrant. Return the cooked sausage to the skillet, stir to combine and heat through, about 1 minute. Remove from heat and set aside.

Cheese & heat layer

    Prepare cheese spread

    In a small bowl, combine 2 ounces softened cream cheese, 1 tablespoon hot sauce, and 1/4 cup of the shredded pepper jack (reserve remaining cheese for topping). Mix until smooth and spreadable. This creates a molten, spicy binder that makes the Doomsday Device indulgently hot and gooey.

    Assemble on omelet

    Spoon the hot sausage and pepper mixture down the center of the semi-set omelet in a line. Dollop the cream cheesehot sauce mixture evenly over the sausage. Sprinkle the remaining shredded pepper jack (about 3/4 cup) and 1/2 cup shredded sharp cheddar on top of the filling.

    Fold and finish

    Using a spatula, carefully fold one side of the omelet over the filling, then fold the other side to form an envelope or roll. Press gently and keep over low heat for 30–60 seconds to melt the cheeses and finish cooking the eggs. If your skillet has a lid, cover for 20–30 seconds to help cheese melt without overcooking the egg.

Finishing & garnish (hot)

    Plate and garnish

    Slide the finished omelet to a plate. Top with 2 tablespoons pickled jalapeños if using, sprinkle 1 tablespoon chopped cilantro and 1 tablespoon thinly sliced green onion. Serve with lime wedges on the side for squeezing over the omelet to brighten flavors.

    For an extra ‘doomsday’ heat, finish with a few dashes of your hottest hot sauce. Serve immediately while the filling is molten and very hot.
