Prepare equipment
Line a small baking sheet with parchment or set out chocolate molds. Have a heatproof bowl and a small saucepan ready for a double boiler (or use a microwave-safe bowl if using microwave method). Lightly oil the molds or parchment with the mold release oil.

Melt cocoa butter
Chop the cocoa butter into small pieces so it melts evenly. Set the heatproof bowl over a pot of gently simmering water (double boiler). Make sure the bowl does not touch the water. Stir the cocoa butter occasionally until fully melted and clear, about 5–7 minutes. If using coconut oil, melt the same way; it will liquefy faster.

Emulsify and sweeten
Once the cocoa butter is fully melted and warm (not too hot), remove the bowl from the heat. Add about one-third of the sifted dry mix to the melted fat and whisk vigorously until smooth. Continue adding the dry mix in two more increments, whisking to fully incorporate and eliminate lumps. Add vanilla extract and sea salt and whisk until glossy and homogeneous. Taste a small amount (use a clean spoon) and adjust sweetness or salt if needed by adding a little more powdered sugar or a pinch of salt.

Finish and temper (optional for shine and snap)
For a quick temper-like finish at home: cool the mixture by placing the bowl in a larger bowl of ice water and stirring until it thickens slightly and registers around 27–28°C (80–82°F). Then gently re-warm over the double boiler very briefly just until it reaches about 31–32°C (88–90°F) for dark-style chocolate or 29–30°C (84–86°F) for milk-style, removing immediately from heat. If you prefer a simpler method, skip cooling and pour while still warm; the chocolate will still set but may be softer and less glossy.

Pour into molds
Working quickly, pour or spoon the chocolate into prepared molds or spread onto the parchment to make a bark about 1/8–1/4 inch thick. Tap the mold or sheet gently on the counter to release air bubbles and smooth the surface with an offset spatula if needed.

Add toppings and set
If using add-ins, sprinkle chopped toasted nuts, dried fruit, or sea salt flakes over the surface now so they adhere as the chocolate sets. Press them lightly into the warm chocolate.

Chill and unmold
Let the chocolate cool at room temperature until just set (20–30 minutes), then move to the refrigerator for 10–20 minutes to fully firm up. Once solid, remove from molds or break the bark into pieces. Store in an airtight container in a cool, dry place or refrigerated if your kitchen is warm.

If adding toasted nuts: toast them in a dry skillet over medium heat, shaking frequently, until fragrant and lightly browned, 4–6 minutes. Cool and chop before sprinkling on the chocolate at the pouring step.

If using dried fruit: chop into small pieces so they distribute evenly and press into the surface immediately after pouring.

To create flavored bars: stir micro amounts (1/8–1/4 tsp) of instant espresso powder or orange zest into the melted chocolate during the emulsify step. For spiced chocolate, add a pinch of cinnamon or cayenne to taste.

For glossy, professional-looking bars, use the temper step described above; for quick chocolate used in baking or candy coatings, skip tempering and allow to fully cool until set.
