Burger Patties

Form patties
Divide the ground beef into two equal portions (about 8 oz each). Gently shape each portion into a patty roughly 3/4" to 1" thick and slightly wider than the bun. Do not overwork the meat.

Press a shallow dimple into the center of each patty with your thumb — this helps the patty cook evenly and stay flat.

Season both sides of each patty with kosher salt and freshly ground black pepper. Lightly brush or rub Worcestershire sauce on both sides for umami.
Brown Butter & Topping

Make brown butter
In a small light-colored skillet or saucepan over medium heat, add 4 tablespoons unsalted butter. Melt and swirl until it foams, then watch closely as the milk solids turn golden-brown and release a nutty aroma (about 4–6 minutes). Remove from heat immediately and transfer the brown butter to a heatproof bowl to stop cooking. Reserve 1 tablespoon of the brown butter for finishing the patties; the rest will be used in the burger sauce and to sauté shallot/garlic.

Sauté aromatics
Return the skillet to medium-low heat, add 1 tablespoon of the reserved brown butter, then add the minced shallot and garlic. Sauté gently for 45–60 seconds until softened and fragrant but not browned. Remove from heat and allow to cool slightly; this will be folded into the mayo mixture and can also be spooned onto the finished burger for extra richness.

Prepare cheeses & pickles
Slice the sharp cheddar thin enough to melt quickly. If using blue cheese, have it crumbled and ready. Drain excess liquid from pickled red onion and set aside.

Toast buns
Heat a clean skillet or griddle over medium heat. Spread 1 tablespoon butter evenly over the cut faces of the buns. Toast buttered sides down until golden brown and crisp, about 1–2 minutes. Set toasted buns aside.

Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add the reserved 1 tablespoon brown butter and swirl to coat. Place patties in the pan (do not overcrowd). Cook undisturbed for 3–4 minutes to form a good crust. Flip once and immediately top each patty with sliced cheddar and a sprinkle of crumbled blue cheese (if using). Continue cooking 2–3 minutes for medium (adjust time for desired doneness). If necessary, cover the pan loosely for 30–60 seconds to help cheese melt.

Finish burgers
Remove patties to a plate and rest briefly (1–2 minutes). While resting, spread mayonnaise and Dijon mustard on the bottom bun and spoon a little of the browned-butter/shallot/garlic mixture over the mayo (about 1/2 tablespoon per burger) to create a brown-butter mayo. Place lettuce and tomato on the bottom bun (if using). Add the cheeseburger patty, top with pickled red onions, and a drizzle (or small spoonful) of the remaining brown butter if desired for extra richness. Cap with the toasted top bun.
