Make the burger sauce
In a small bowl, combine vegan mayonnaise (1/2 cup), ketchup (2 tbs), Dijon mustard (1 tsp), garlic powder (1/2 tsp), lemon juice (1 tsp), and salt (1/4 tsp). Whisk until smooth. Taste and adjust acid or salt. Refrigerate until ready to assemble (at least 10 minutes).

Bake or fry fries
Preheat oven to 425°F (220°C). Toss cut potatoes (1 lb) with olive oil (1 tbs) and salt (1/2 tsp) on a rimmed baking sheet in a single layer. Bake 25–30 minutes, flipping once halfway, until golden and crisp. If deep-frying, heat oil to 350°F (175°C) and fry in batches until golden, about 4–5 minutes per batch. Keep warm and season with a pinch more salt.

Prepare patties
If using frozen patties, thaw in the refrigerator or according to package instructions. Lightly press patties into uniform thickness if needed so they cook evenly. Pat them dry with a paper towel if moist. Mix salt (1 tsp), black pepper (1 tsp), smoked paprika (1 tsp) and Worcestershire-style sauce (1 tsp) in a small bowl and sprinkle evenly over both sides of the patties.

Cook patties
Heat a large skillet or cast-iron pan over medium-high heat. Add vegetable oil (2 tbs) and swirl to coat. When oil shimmers, add the Beyond patties, leaving space between them. Cook for 3–4 minutes without moving to develop a crust. Flip and cook another 3–4 minutes until internal temperature reaches 165°F (74°C) or according to package guidance and the patties are browned and slightly firm. If using vegan cheese, place a slice on each patty in the final 1 minute of cooking and cover the pan briefly to melt.

Assemble burgers
Spread 1–2 tablespoons of the prepared sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, add the cooked Beyond patty (with melted vegan cheese if used), top with 1–2 tomato slices, some thinly sliced red onion, and pickles (about 2–3 tbsp). Add more sauce to the top bun if desired. Close burgers and serve immediately with fries or preferred side.
