    Prep and dry

    Pat the wings very dry with paper towels. Removing surface moisture helps them crisp.

    Toss with dry rub

    In a large bowl, combine the baking powder, kosher salt, black pepper, garlic powder, and smoked paprika. Add the wings and toss until each piece is evenly coated. Let rest uncovered in the bowl or on a wire rack in the refrigerator for 30–60 minutes to dry the skin further (optional but recommended).

Cooking the Wings

    Oven method (crispy)

    Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange wings in a single layer on the rack, leaving space between pieces. Bake 25 minutes, flip wings, then bake another 15–20 minutes until skin is deep golden and crisp and internal temperature reads 165°F (74°C). If you prefer extra crisp, broil 2–3 minutes, watching carefully.

    Alternative: Frying

    Heat 2–3 inches of neutral oil (vegetable, canola) to 350°F (175°C). Fry wings in batches 8–10 minutes until crisp and cooked through. Drain on paper towels and keep warm in a low oven while finishing remaining batches.

Buffalo Sauce

    Make sauce

    While wings cook, melt the butter in a small saucepan over low heat. Add the hot sauce, apple cider vinegar, Worcestershire, honey, cayenne, and salt. Whisk until combined and warm but not boiling. Taste and adjust heat by adding more honey to tame or more cayenne for extra kick. Keep warm.

    Toss wings in sauce

    Place the hot cooked wings in a large clean bowl. Pour the warm buffalo sauce over the wings and toss vigorously until each wing is evenly coated. Serve immediately so sauce stays glossy and the skin remains slightly crisp.

For Serving

    Arrange wings on a platter with celery and carrot sticks. Spoon blue cheese dressing or ranch into a small bowl for dipping. Sprinkle optional chopped parsley over wings for color. Serve hot.
