Method
Patties & Seasoning
- 1
Mix and form
Place the ground beef in a bowl. Add kosher salt, black pepper, and Worcestershire sauce. Gently combine with your hands until just mixed — avoid overworking. Divide into 4 equal portions (about 4 oz each). Lightly form into 3/4-inch-thick patties, creating a slight indentation in the center of each with your thumb to reduce puffing while cooking.
- 2
Chill
Set the formed patties on a plate, cover lightly with plastic wrap, and chill in the refrigerator for 15 minutes to help them hold shape while cooking.
Bacon & Cheese
- 3
Cook bacon
Preheat oven to 400°F (200°C). Arrange the bacon slices in a single layer on a wire rack set over a rimmed baking sheet. Bake 12–18 minutes, flipping once halfway, until crispy but still slightly flexible. Remove and transfer to a paper towel–lined plate to drain. Alternatively, cook bacon in a skillet over medium heat until crisp, about 8–10 minutes, turning as needed.
- 4
Crumble/stack
When cool enough to handle, for each burger use two bacon slices: stack or slightly overlap them to create a bacon layer. Keep remaining bacon warm.
- 5
Cheese
Have cheese slices ready to place on patties in the last minute of cooking so they melt over the meat.
Buns & Toppings
- 6
Prep vegetables
Slice the tomato into 1/4-inch rounds. Thinly slice the red onion into rings. Wash and dry lettuce leaves. Keep pickles ready.
- 7
Toast buns
Heat a large skillet or griddle over medium heat. Melt 2 tbs unsalted butter and 1 tbs neutral oil in the pan. Split buns and place cut sides down in the skillet. Toast until golden and crisp, about 1–2 minutes. Remove and set aside.
- 8
Spread mayo
Spread mayonnaise evenly on the cut sides of the toasted buns (roughly 1–2 tbs per bun half).
Cooking & Finish
- 9
Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat until shimmering. Add 1 tbs neutral oil if pan is dry. Place the chilled patties in the hot pan, leaving space between them. Cook without moving for 3–4 minutes until a deep brown crust forms. Flip and cook 2–3 minutes for medium (adjust time for desired doneness).
- 10
- 11
Assemble burgers
On each bottom bun, place a lettuce leaf, then the bacon-topped cheeseburger patty. Add tomato slices, red onion rings, and two pickle slices. Cap with the mayo-spread top bun.
- 12
Serve
Serve immediately while hot with additional condiments or fries as desired.
