Prep glass and mint
Place a highball or Collins glass in the freezer for a few minutes to chill (optional). Meanwhile, gently wash the mint leaves and pat dry. Reserve one sprig for garnish.

Muddle
In a sturdy mixing glass or cocktail shaker, add the fresh mint leaves (about 8 leaves), the simple syrup (0.5 oz) and fresh lime juice (0.75 oz). Using a muddler, gently press the mint 6β8 times β you want to bruise the leaves to release oils without shredding them (over-muddling makes the drink bitter).

Add spirits and ice
Add Agwa (2 oz) and white rum (1 oz) to the muddled mixture. Fill the shaker with crushed ice (about 1 cup).

Shake
Shake vigorously for about 8β10 seconds until the outside of the shaker feels cold and frosty. This chills and lightly dilutes the cocktail.

Strain and build
Strain the contents (including mint pieces if desired) into the chilled highball glass filled halfway with fresh crushed ice. Top with soda water (about 2 oz) to taste, gently stir once or twice to combine and lift the mint aroma.

Finish and garnish
Optional: add 2 dashes of Angostura bitters on top for aromatic complexity. Garnish with the reserved mint sprig (slap it between your palms first to activate oils) and a lime wheel or wedge on the rim.

Serve immediately with a straw. Encourage the drinker to give the mint a gentle stir before sipping so the herbal Agwa character remains balanced.
