Prepare Sushi Rice

    Cook Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice with 1.5 cups of water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

    Season Rice

    In a small bowl, mix rice vinegar and sea salt until dissolved. Transfer the rice to a large bowl, gently fold in the vinegar mixture, and allow it to cool to room temperature.

Prepare Spicy Tuna

    Mix Spicy Tuna

    In a medium bowl, combine diced tuna, Sriracha, mayonnaise, chopped green onion, and sesame oil. Mix until well combined. Adjust Sriracha to taste for desired spiciness.

Assemble the Tiger

    Layer Ingredients

    Lay a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top edge. Press the rice down gently.

    Add Spicy Tuna and Vegetables

    Evenly spread the spicy tuna mixture along the bottom edge of the rice. Top with sliced avocado and julienned cucumber.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

    Slice and Top

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Arrange the slices on a plate and top each piece with a slice of yellowtail, jalapeño, a dollop of wasabi aioli, ikura, and a sprinkle of micro cilantro.
