Prepare the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Heat the Oil
In a large skillet, add vegetable oil and heat over medium-high heat until shimmering.

Sear the Salmon
Place salmon fillets skin-side down in the skillet. Sear for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes until cooked through.

Make Wasabi Aioli
In a small bowl, mix mayonnaise and wasabi paste until well combined. Adjust wasabi to taste.

Plate the Dish
Place the seared salmon on a plate. Drizzle with ponzu sauce, top with a dollop of wasabi aioli, and garnish with sriracha and tobiko.
