Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice with 2.5 cups of water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar dissolves. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare the Salmon
Heat olive oil in a skillet over medium-high heat. Season the salmon fillet with salt and sear for about 3-4 minutes on each side until cooked through and golden brown. Remove from heat and let it rest for a few minutes before slicing.

Assemble the Dish
On a serving plate, spread a layer of sushi rice. Arrange slices of avocado and cucumber on top. Add the sliced seared salmon, ikura, and drizzle with ponzu sauce. Sprinkle togarashi and top with microgreens.
