Prepare the Filling
In a mixing bowl, combine the crab meat, chèvre cream cheese, chopped fresh chives, garlic powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

Assemble the Wontons
Take a wonton wrapper and place about 1 teaspoon of the crab mixture in the center. Moisten the edges of the wrapper with water. Fold the wrapper over to create a triangle, pressing to seal the edges tightly. You can also fold the corners into the center to create a pouch shape if desired.

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Wontons
Carefully add the wontons to the hot oil in batches, being sure not to overcrowd the pot. Fry for about 3-4 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the crab wontons hot with cranberry sweet & sour sauce on the side for dipping.
