Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes. Then transfer to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Form Rice Cakes
Once the sushi rice has cooled, wet your hands to prevent sticking. Take a handful of rice and shape it into a compact rectangle or patty. Repeat with the remaining rice.

Fry the Rice Cakes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the rice cakes, frying them for about 3-4 minutes on each side until they are golden brown and crispy. Remove and drain on paper towels.

Serve
Serve immediately while the rice cakes are warm and crispy. Enjoy your Avocado Crispy Rice!
