Prepare lettuces
Rinse romaine and iceberg lettuce thoroughly under cold water. Pat dry with paper towels or spin in a salad spinner. For romaine, cut each head into 2–4 wedges depending on size so you have substantial wedge pieces (aim for about 6 wedge segments total). Chop the iceberg into roughly 1-inch pieces to add texture.

Arrange wedges
On a large platter or individual plates, place romaine wedges spaced evenly. Scatter the chopped iceberg around and between the wedges to create a generous bed.

Add toppings
Evenly distribute halved cherry tomatoes around the wedges. Arrange quartered hard-cooked eggs next to or on top of wedges. Sprinkle crumbled bacon and shredded cheddar evenly. Scatter thinly sliced red onion and croutons across the salad. If using blue cheese crumbles, add them sparingly over the wedges.

Season
Lightly season the assembled salad with kosher salt (about 1/2 tsp) and freshly ground black pepper (about 1/4 tsp). Sprinkle chopped fresh chives over the top for color and oniony brightness.

Keep the Green Goddess dressing on the side in a small bowl or pitcher so guests can spoon or drizzle to taste. Serve immediately so wedges stay crisp.

Combine base ingredients
In a medium bowl or the jar of a blender, add 1/2 cup mayonnaise, 1/4 cup Greek yogurt, and 1/4 cup buttermilk.

Add herbs and aromatics
Add packed parsley, tarragon, chives, basil, anchovy fillets (or anchovy paste), and the minced garlic clove to the bowl or blender.

Flavor and emulsify
Add lemon juice, Dijon mustard, 1 tablespoon extra-virgin olive oil, 1/2 tsp salt, and 1/4 tsp freshly ground black pepper. Using an immersion blender or regular blender, puree until the mixture is smooth and the herbs are fully incorporated. If you prefer a chunkier dressing, pulse briefly or finely chop the herbs and whisk by hand.

Adjust consistency
If the dressing is too thick to drizzle, thin gradually with up to 2 tablespoons of water (or additional buttermilk), 1 teaspoon at a time, until you reach a pourable consistency appropriate for serving on the side.

Taste and finish
Taste and adjust seasoning — add more salt, pepper, or lemon juice as needed. Transfer the dressing to a small serving bowl or jar and chill for 10–15 minutes if time allows to let flavors meld. Stir before serving.
