    Sweeten and flavor yogurt

    In a medium bowl, combine 2 cups plain Greek yogurt with 2 tablespoons honey and 1 teaspoon vanilla extract. Stir until smooth and evenly combined. Taste and adjust sweetness with up to 1 additional tablespoon honey if desired.

House-made Granola

    Preheat oven

    Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.

    Mix dry ingredients

    In a large bowl, combine 1.5 cups rolled oats, 0.5 cup chopped almonds, 0.25 cup chopped walnuts, 0.25 cup unsweetened shredded coconut, 2 tablespoons pumpkin seeds, 2 tablespoons brown sugar, 0.5 teaspoon ground cinnamon, and 0.25 teaspoon salt. Stir until evenly distributed.

    Add wet ingredients

    Pour 3 tablespoons maple syrup and 1 tablespoon olive oil (or melted coconut oil) over the oat mixture. Stir thoroughly so all dry ingredients are lightly coated and the mixture clumps slightly.

    Bake granola

    Spread the mixture in an even layer on the prepared baking sheet. Bake for 18–22 minutes, stirring once halfway through to ensure even toasting. Watch closely toward the end to prevent burning; the granola should be golden and fragrant.

    Cool and finish

    Remove the granola from the oven and let it cool completely on the baking sheet; it will crisp up as it cools. Once cool, break into clusters. Stir in additional 1–2 tablespoons of nuts or seeds if you prefer larger clusters.

Seasonal Berries & Assembly

    Prepare berries

    Rinse 0.75 cup strawberries, 0.5 cup blueberries, and 0.25 cup raspberries in cold water. Drain and pat dry. Hull and quarter the strawberries (or chop larger berries) so pieces are bite-sized.

    Layer the parfaits

    To assemble two servings: spoon about 1/3 of the sweetened yogurt into the bottom of two serving glasses or bowls (about 1/3 cup each). Add a layer of granola (about 2–3 tablespoons), then a layer of mixed berries (about 1/4 cup). Repeat: another 1/3 of the yogurt, more granola (2–3 tablespoons), and remaining berries. Finish with the remaining yogurt and a final sprinkle of granola (about 2 tablespoons). If desired, drizzle 1 teaspoon extra honey or maple syrup over the top and garnish with fresh mint leaves.

    Serve

    Serve immediately so the granola stays crisp. If making ahead, store the granola separately and assemble just before serving to maintain crunch.
