    Prepare sauces and seasoning

    In a small bowl combine the mayonnaise, Dijon mustard, 1/4 teaspoon of the salt and 1/4 teaspoon of the black pepper. Stir until smooth and set aside. Finely chop the chives or green onion if using and reserve.

    Heat pan and melt butter

    Place a heavy skillet or nonstick pan over medium heat. Add 1 tablespoon of the unsalted butter and let it melt and begin to foam, coating the surface.

    Cook eggs with broken yolk

    Crack all 4 eggs into a bowl or measuring cup (keeps shells out). Carefully slide the eggs into the pan so they are close but not overlapping. Immediately, using the back of a spoon or a spatula, gently press into each yolk to break it so the yolk spreads slightly but still stays mostly on the white. Season the eggs with the remaining 3/4 teaspoon salt and 3/4 teaspoon pepper (divide as preferred). Reduce heat to medium-low. Let the eggs cook undisturbed until the whites are mostly set and the broken yolks have thickened but are not fully firm, about 3 to 4 minutes. For firmer yolks cook 1–2 minutes longer. If you prefer melted cheese, place the cheddar slices on the eggs in the final 1 minute and cover the pan briefly to melt.

    Toast and butter bread

    While eggs cook, spread the remaining 1 tablespoon unsalted butter (or soft butter) on one side of each bread slice. Place bread butter-side-down in a separate skillet or in a toaster oven and toast until golden and crisp, about 2–3 minutes per side in a skillet. If using the same pan, move cooked eggs to a plate and toast quickly in any leftover butter.

    Assemble sandwiches

    Spread the mayonnaise-Dijon mixture evenly over the unbuttered sides of two bread slices. If using chives, sprinkle half onto the mayo. Using a spatula, lift the eggs from the pan—letting excess butter drip back—and place two eggs (or two broken-yolk halves) onto each mayo-coated slice. If cheese hasn't been melted on the eggs, add the cheddar now. Top each with the remaining bread slice, buttered side out.

    Finish and serve

    If you like a crisp exterior, return the assembled sandwiches to the hot skillet, pressing gently with a spatula and cooking 1–2 minutes per side over medium heat until golden and warmed through. Remove, cut in half if desired, and serve immediately. Taste and adjust with extra salt, pepper, or hot sauce to preference.
