Molten Chocolate Cakes

Prepare molds and oven
Position an oven rack in the center and preheat oven to 425°F (220°C). Generously butter four 6-ounce ramekins with the reserved butter and dust with cocoa powder, tapping out excess. Place ramekins on a baking sheet.

Melt chocolate and butter
Combine chopped bittersweet chocolate and 8 tbsp cubed butter in a heatproof bowl set over a barely simmering pot of water (double boiler). Stir occasionally until smooth and fully melted. Remove from heat and let cool for 2–3 minutes.

Whisk eggs and sugar
In a medium bowl, whisk together 4 whole eggs, 2 egg yolks, and 2 tbsp granulated sugar until pale and slightly thickened, about 1–2 minutes by hand or 30–45 seconds with a hand mixer on medium.

Combine and finish batter
Temper the eggs by pouring about one-third of the melted chocolate into the egg mixture while whisking constantly to avoid cooking the eggs. Then fold in the remaining chocolate until homogeneous. Sift 1 tbsp flour and 1 tsp salt over the batter and gently fold until just combined, taking care not to overmix. The batter should be glossy and slightly thick.

Bake
Bake in the preheated 425°F (220°C) oven for 10–12 minutes. The edges should be set and the center still soft and jiggly; times vary by oven and ramekin material — check at 10 minutes.

Release cakes
Remove the baking sheet from the oven and let the cakes rest 1 minute. Run a small knife around the edges of each ramekin to loosen. Invert each ramekin onto a dessert plate, tap gently, and lift to release the cake with the molten center intact.

While cakes bake (or beforehand), make the soil. Place toasted hazelnuts, 3 tbsp flour, 2 tsp cocoa powder, and 2 tbsp dark brown sugar in a food processor. Pulse briefly to combine and break nuts into coarse crumbs — do not overprocess into a paste; you want gritty, soil-like texture.

Spread the soil mixture in a single layer on a small baking sheet and bake in the 425°F (220°C) oven for 6–8 minutes, stirring or shaking halfway through, until dry-looking and aromatic. Watch closely to avoid burning. Cool completely; it will crisp as it cools.
Bonta Salted Vanilla Gelato (quick version)

In a medium saucepan, combine 1 cup whole milk, 1 cup heavy cream, and 1 tbsp granulated sugar. Add vanilla bean seeds and scraped pod (or 1 tsp vanilla extract if using). Warm gently over medium heat until just steaming — do not boil.

If using the optional egg yolk for a silkier texture: temper the yolk by whisking it in a small bowl, then slowly drizzle 1/4 cup of the hot milk mixture into the yolk while whisking. Return the tempered yolk to the saucepan and cook over low heat, stirring constantly with a spatula, until the custard coats the back of a spoon (about 170–175°F / 77–80°C). Remove from heat. If not using yolk, simply remove the warmed milk/cream from heat.

Stir in 3 pinches of fine sea salt. Cool the custard to room temperature, remove vanilla pod, then refrigerate until thoroughly chilled (at least 2 hours). Churn according to your ice cream maker's instructions until soft-set. Transfer to a container and freeze 2–4 hours to firm. If you don't have an ice cream maker, pour into a shallow metal pan and freeze, scraping and stirring every 30 minutes until smooth and scoopable.
Assembly & Garnish

Place an inverted molten chocolate cake on each dessert plate. Spoon a generous pinch (about 2 tbsp) of chocolate hazelnut soil alongside or partially around the cake to create texture contrast.

Add a scoop (about 3.5 oz / 100 g) of chilled salted vanilla gelato next to the cake. Sprinkle a few chocolate shavings or cocoa nibs over the gelato and cake, and scatter toasted hazelnut halves on the plate.

If desired, finish with a light dusting of cocoa powder and a tiny pinch of flaky sea salt over the gelato to echo the 'bonta salted vanilla' note. Serve immediately while cake center is molten.
