Classic Cocktails
1. Gin & Tonic (single)
Fill a highball glass with ice (about 3/4 full). Pour 2 oz London Dry Gin over the ice. Add 4 oz chilled tonic water. Gently stir once to combine. Squeeze one lime wedge over the drink, drop the wedge in and serve with a straw or stirrer.
2. Old Fashioned (single)
In a mixing glass, place 0.25 oz simple syrup (or 1 sugar cube) and add 2 dashes Angostura bitters. Add 2 oz bourbon and a large ice cube or several ice cubes. Stir for 20–30 seconds until chilled and slightly diluted. Strain into a rocks glass over one large ice cube. Express the orange peel over the drink (twist to release oils), run the peel around the rim, and drop it into the glass.
3. Mojito (single)
In a Collins glass, add 0.5 tsp sugar (or 0.25 oz simple syrup) and 0.75 oz fresh lime juice. Add 8 mint leaves and gently muddle 6–8 times—press to release oils but avoid shredding. Add 2 oz white rum and fill the glass with ice. Top with 1 oz club soda (or soda water) and gently stir from the bottom to lift the mint. Garnish with an additional mint sprig and a lime wedge.

4. Batch Vodka Martini (approx. 4 servings)
Combine 12 oz vodka with 1 oz dry vermouth in a clean pitcher or bottle and chill for at least 1 hour. To serve, chill martini glasses. Pour 3 oz of the chilled mixture per serving into each glass. Garnish each with 1–2 green olives on a cocktail pick or a lemon twist, as preferred.
5. Mint Syrup (for multiple mojitos)
Bring 0.5 cup simple syrup and 0.5 cup water to a gentle simmer in a small saucepan. Remove from heat, add 1 cup fresh mint leaves and steep for 15 minutes. Strain into a jar, cool, and refrigerate. Use 0.25–0.5 oz mint syrup per mojito instead of muddling if batching or for quicker service.
6. Service & Garnish Prep
Keep club soda and tonic chilled. Pre-cut lemon twists and lime wedges and store in an airtight container in the fridge. Prepare crushed or cubed ice in advance. If rimming glasses, moisten the rim with lime and dip into sugar. For faster service, pre-batch common cocktails (gin & tonic: pre-mix gin and tonic in ratio 1:2 and keep chilled; mojitos: prepare mint syrup and pre-portion rum and lime).
