Prepare
Preheat oven to 210°C (410°F). Butter a 9-inch (23 cm) springform pan lightly, then line the pan with a single large sheet of parchment paper so the paper comes up at least 2–3 inches above the rim on all sides. This high collar allows the cheesecake to puff and char without spilling.

Warm and mix cream cheese
Place the room-temperature cream cheese in a large mixing bowl. Beat on medium speed until smooth and lump-free, about 2–3 minutes. Scrape down the sides of the bowl.

Add sugar and eggs
Add the granulated sugar to the cream cheese and beat until combined and slightly glossy, about 1–2 minutes. Add eggs one at a time, mixing briefly after each addition until incorporated. Don't overbeat; mix just until smooth.

Incorporate flour, cream, and flavor
Sift the flour over the batter and fold in gently to combine. Slowly stream in the heavy cream while mixing on low speed until the batter is very smooth and slightly loose (it should pour slowly off a spatula). Mix in vanilla extract and salt until fully incorporated. Strain the batter through a fine-mesh sieve into a large measuring cup or bowl to remove any remaining lumps—this helps achieve the signature silky surface.

Bake
Pour the sieved batter into the prepared pan. Tap the pan gently on the counter to release any large air bubbles. Place the pan on a rimmed baking sheet. Put the baking sheet into the preheated oven and immediately pour about 500 ml (about 2 cups) of hot water into the baking sheet to create a shallow water bath (this step is optional but helps stabilize temperature). Bake at 210°C (410°F) for 35–45 minutes, monitoring color. The top should become deeply golden to almost black in spots (the classic 'burnt' look), and the center will still be slightly jiggly — it will firm as it cools. Exact time depends on oven; aim for a dark brown top and a creamy center.

Cool
Remove cheesecake from the oven and from the water bath, transfer to a cooling rack, and let cool to room temperature (about 1½–2 hours). Then chill in the refrigerator for at least 4 hours, preferably overnight, to set and develop flavor.

Prepare apples
While the cheesecake bakes or chills, peel, core, and dice the apples into roughly 1⁄2-inch (1.2 cm) cubes. Toss the diced apples with the lemon juice to prevent browning.

Make caramel
In a heavy-bottomed skillet over medium heat, add the granulated sugar in an even layer. Let the sugar melt without stirring for 2–3 minutes; once edges begin to liquefy and turn amber, gently swirl the pan to promote even melting. When the sugar reaches a deep amber color, add the butter and whisk or stir vigorously until fully incorporated and smooth.

Finish caramel with cream
Carefully pour in the heavy cream (it will bubble vigorously) while stirring constantly until the caramel is smooth. Stir in the apple cider (or apple juice) and coarse salt. Reduce heat to low and simmer 1–2 minutes to integrate flavors and slightly thicken the sauce.

Cook apples in caramel
Add the diced apples and ground cinnamon to the caramel sauce and cook over medium-low heat for 4–6 minutes, stirring occasionally, until apples are just tender but still hold shape and the sauce coats them. Taste and adjust salt or lemon if needed. Remove from heat and let cool to warm or room temperature before using on cheesecake.

Spoon the apple caramel over the top center of the cheesecake, allowing some of the sauce to run down the sides. For a composed dessert, arrange a ring of apple-caramel pieces around the center. If desired, warm a few tablespoons of the caramel and brush a thin glaze on the exposed burnt top for shine.

Slice with a hot, dry knife (dip in hot water and wipe dry between cuts) for clean slices. Serve chilled or at cool room temperature. Leftover cheesecake with apple caramel will keep refrigerated for up to 4 days; store caramel separately if you prefer to preserve its texture.
