Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the rice cooker's instructions. Once cooked, let it sit covered for 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is done resting, transfer it to a large bowl and gently fold in the vinegar mixture with a wooden spatula. Let it cool to room temperature.

Shape the Nigiri

Wet your hands with water to prevent sticking. Take a small handful of the seasoned rice and mold it into an oval shape, about the size of a golf ball.

Top with Yellowtail

Place a slice of yellowtail sashimi on top of each rice mound. If desired, add a small dot of wasabi on top of the fish.

Plate the nigiri and serve with soy sauce on the side for dipping.
